Ingredients (Makes about 6 medium pancakes, serves 2)

All-purpose flour – 125g (1 cup)

Milk – 180ml (¾ cup)

Egg – 1 large

Baking powder – 2 teaspoons (8g)

Sugar – 1 tablespoon (13g)

Salt – ¼ teaspoon

Butter (melted) – 30g (2 tablespoons)

Vanilla extract – 1 teaspoon

Optional toppings – maple syrup, berries, chocolate chips, whipped cream

---

Instructions

1. Mix the batter (5 minutes)
In a bowl, whisk together 125g flour, 2 tsp baking powder, 13g sugar, and ¼ tsp salt.
In another bowl, whisk 1 egg, 180ml milk, 30g melted butter, and 1 tsp vanilla.
Pour the wet into the dry and mix until just combined. A few lumps = totally fine.

2. Heat your pan (1 minute)
Preheat a non-stick skillet over medium-low heat. Add a small dab of butter or oil.

3. Cook those pancakes (2–3 minutes per side)
Pour about ¼ cup (60ml) batter per pancake.
Cook until bubbles form and edges look set—flip and cook for another 2 minutes until golden brown.

4. Stack and serve (immediately)
Serve hot with toppings of choice. Syrup drizzle is basically required by law.

Pro Tip

Don’t overmix the batter. Overmixed = chewy pancakes. Just stir until combined and lumpy and let it rest 2–3 minutes if you can.
