How to make Chicken Quesadilla – Easy Recipe for Beginners
This is the kind of dinner that takes 15 minutes, uses leftover chicken, and makes your pan smell like a hug.
Golden outside, cheesy inside. It’s a weeknight miracle, honestly.
Ingredients (Serves 2 people)
Flour tortillas – 2 large (about 25cm each)
Cooked chicken breast – 200g, shredded or chopped
Shredded cheddar cheese – 100g
Shredded mozzarella – 50g (for stretch!)
Onion (optional) – 30g, finely chopped
Butter or oil – 1 tablespoon
Sour cream or salsa – for dipping
Salt & pepper – to taste
Chili flakes or taco seasoning (optional) – ½ tsp
Instructions
1. Heat it up (1 minute)
Place a pan over medium heat. Add a bit of butter or oil (about 1 tbsp).
2. Mix your filling (2 minutes)
In a bowl, toss together 200g cooked chicken, 100g cheddar, 50g mozzarella, onion (if using), salt, pepper, and any seasoning you like.
3. Assemble the quesadilla (1 minute)
Place one tortilla in the pan. Add your filling evenly. Cover with the second tortilla.
4. Toast & flip (4–5 minutes)
Cook the bottom for 2–3 minutes or until golden.
Carefully flip (use a plate if you’re nervous) and cook the other side for 2 more minutes, until crispy and cheese is fully melted.
5. Slice & serve (1 minute)
Remove from pan, let it sit for 30 seconds, then slice into triangles.
Serve with sour cream, salsa, or just eat it like a savage (we don't judge).
Pro Tip
You can make this with leftover rotisserie chicken, pulled pork, or even scrambled eggs for a breakfast version.
